Speaking of which: I haven't seen any pictures of Charon in the press, but I can't imagine that New Horizons did not get any. Why the omission?

Limited bandwidth is my guess. I'm not sure what's already been transmitted, but I know high-resolution photos of the moons are coming soon. My guess is that there just hasn't been anything dramatic about the moons in what's been sent so far.

I also found an older article with says it will take more than a year to download all the data collected during the flyby, and describes how after launch, they devised a way to double the bandwidth by using the 2 redundant antennas simultaneously:
